Meet Luke Fredberg, the Australian-born, London-based co-founder behind Protein, mate. Here is Luke’s story.
Welcome to Protein, mate. I’m Luke, and I can’t wait to share with you what we’re creating in the heart of the City of London.

Born from a Need for More Protein, Made to Power Your Mornings.
Protein, mate was born when I realised my family and I were short on protein to power our days. I began crafting protein-packed tray bakes for breakfast in our kitchen. Each portion offers 20–30 grams of protein, delivering warm, savoury goodness to fuel our mornings.

How to get these on-the-move?
I then started making these tray bakes for my mates, who were keen to ramp up their protein game. They all said the same thing: “I’d love to be able to grab these on-the-move”. So, I scoured London’s breakfast and lunch scene. The reality? Most options are cold and limited to one of the ‘Five S’s’: sandwiches, sushi, salads, soups, and sausage rolls! Many are lacking a real protein punch.

Cypriot Origins, London Baked
Inspired by my Cypriot roots, I wove bold Eastern Mediterranean ingredients, like halloumi and tahini, into my bakes.
I kept experimenting with recipes, lunch ideas and other add-ons, quickly learning just how creative I could get with flavours while also avoiding ultra-processed ingredients and artificial sweeteners.

Now, I’m excited to bring these vibrant, protein-rich tray bakes, and a whole menu of other protein creations, to everyone craving nutrient dense, on-the-go provisions.
